Your notes live on a slim rail at the edge of the screen, so they never cover your work until you ask for them.
Push the mouse against the screen edge twice, or press Ctrl+Alt+N from any app. The rail opens on the monitor you're using.
Hover a tab to open its note and just type. Everything saves on its own, a moment after you stop.
Press Esc or click anywhere else and the note folds back into the rail. Keep the slim rail showing, or hide it in the edge completely.
